Rice pudding with apples


Boil the milk with the rice and sugar until the rice is cooked.

Add the beaten egg yolks and beaten egg whites and mix until the composition is homogeneous.

In a saucepan, caramelize the 50 g sugar, then add the peeled apples and cut into slices and raisins. Cook until the apples are slightly softened and dressed in caramel. Put the vanilla essence, mix and pour half of the composition into a round shape (diameter 28 cm), lined with baking paper, add half the apples, pour the rest of the pudding and then add the rest of the apples.

Bake on medium heat, 170 degrees C, until golden brown (30-40 minutes). Let cool, then cut into slices like a cake.

Depending on your preferences, it can be served with a caramel sauce.

ingredients
500 ml of milk
250 g of rice
2 tablespoons caster sugar
1 tablespoon vanilla sugar
a pinch of salt
3 apples
2 eggs
a pinch of cinnamon powder
a cinnamon stick
a teaspoon of freshly grated lemon
Method of preparation
We boil the milk and when it boils we add the rice that we washed in 2-3 waters. We also add a pinch of salt and cinnamon stick. When the rice has boiled, set it aside and let it cool to absorb the remaining milk.
Until the rice cools, rub the yolks with the caster sugar, vanilla sugar and cinnamon. Peel the apples and cut them into rounds.
Whisk the egg whites.
When the rice has cooled, mix it with the yolks.
Take a heat-resistant dish that we grease with butter and cover with apple slices. The remaining mixture is mixed with the rice and finally add the beaten egg whites and incorporate by mixing lightly.
Pour the composition into the bowl and put in the oven at 180 until browned.

In a non-stick pan, place the cube of butter, grated apples and cinnamon powder, which we heat for about 5 minutes, stirring constantly.

Separate the egg whites from the yolks of the two eggs and whisk the egg whites.

Mix the yolks with the maple syrup, lemon peel, grated apples and hardened rice and gradually add the beaten egg whites, stirring gently!

Put in a heat-resistant dish greased with butter and bake for about 40 minutes.

When I emigrated to America many years ago, the cookbook was one of the few things I brought in my suitcase.

There are some old recipes written by my hand in Silvia's book, such as the communist cocoa ice cream, a recipe made with raw eggs, a simple chocolate cake, pandispan cake with fruits that everyone was making at the time and the donut recipe pickle from my friend Cornelia.

They were old, established recipes, long entered in the Romanian culinary culture and which many, probably, nowadays, are bored with.

For those of us who left, however, the old recipes carefully preserved in old notebooks or books that we brought with us to foreign lands are part of our national identity.

We are attached to them and eager to pass on to our children fragments from our Romanian roots.

It is interesting that the edition of Silvia Jurcovan's cookbook that I have does not have any recipe for rice pudding with apples.

But I found it in Sanda Marin's book, where the egg whites are whipped and added at the end, before putting the pudding in the oven.

Pudding is a super simple combination of rice with milk and apples put in alternating layers.

The apples can be grated, cut into cubes, or slices, according to preference and then hardened. The children like it and I encourage you, mothers with small children, to try the recipe.

It's good, easy to make and nutritious. It can be served with fruit syrup or jam on top. Enjoy your meal!

INGREDIENTS

-50 g of butter + 1 tablespoon of butter to lubricate the form

-1 teaspoon vanilla sugar

METHOD OF PREPARATION

1. Wash the rice and put it in a saucepan. Pour the milk on top and add a pinch of salt.

2. Boil the rice for 10 minutes before it is ready, add the vanilla sugar, butter and 100 g of sugar.

3. Divide the obtained porridge into 3 parts.

4. Peel apples and seeds.

5. Put the apples through the large grater.

6. Grease a silicone form with a tablespoon of butter, put a portion of rice and level it with a tablespoon.

7. Place 1/2 of the grated apples on top and sprinkle with 50 g of sugar and cinnamon to taste.

8. Then add the rice and repeat the layers. The last layer must be made of rice.

9. Cover the pudding with foil so that it does not dry out.

10. Bake the pudding in the preheated oven at 180 degrees for 35-40 minutes.

Let the rice soak in water for an hour, then boil in milk and sweeten to taste (2-3 tablespoons of sugar). Add the vanilla essence or grated lemon peel, then the two yolks and the beaten egg whites with a pinch of salt. Stir gently.
