New potatoes with herbs and white sauce

Method of preparation

Preheat the oven to 200 degrees Celsius and prepare the middle shelf. Meanwhile, wipe the pork muscle with a paper towel to dry completely.

If one part of the muscle is thinner, tie it with a butcher's string so that it cooks evenly over the entire surface.

Take the muscle in your hand and grease it well with oil, then season it well with salt and freshly ground pepper.

Set it aside and heat a frying pan with oil. When the oil starts to smoke, put the meat in the pan and, for about ten minutes, brown it everywhere.

Transfer the meat to a baking dish and let it cool for about 15 minutes.

Meanwhile, mix well in a bowl the butter with the garlic, rosemary and thyme. When the meat is ready, grease it with this mix on top and on the sides.

Cook for 25-35 minutes until the thermometer, inserted in the thickest part of the meat, records 49-51 degrees Celsius (for a meat in the blood) and 51-57 degrees Celsius (for medium rare).

Remove the meat from the oven and place it on a mincer. Cover it lightly with foil and let it rest for at least 20 minutes before serving.

The steak is served with baked vegetables and a sauce for beef steak.


Sauce with lemon and oil

An appetizing sauce, always present in dishes, along with aromatic herbs and spices - as they say, is good for everything, with grilled or baked fish, vegetables, chicken or pork or various salads.

Ingredients - Lemon sauce with oil (approx. 250 ml)
  • 50 ml lemon juice - juice from 1 large lemon
  • 100 ml extra virgin olive oil, good quality
  • 100 ml of good quality sunflower oil or peanut oil
  • 1/2 teaspoon plain Dijon mustard
  • 1/4 teaspoon coarse sea salt, lightly crushed in a mortar
  • 1 teaspoon white or black pepper, freshly crushed
Preparation - Lemon sauce with oil

Put all the ingredients in a bottle or in a jar with a clean lid - according to your preferences, you can increase the amount of olive oil to 150 ml, reducing the sunflower oil to 50 ml.

Thread the lid tightly and shake the bottle or jar for a few seconds, until all the ingredients are emulsified - a fragrant and delicate sauce will result.

The sauce can be stored for a long time in the refrigerator, provided it does not contain fresh herbs or raw garlic. Shake well before each use.

For a spicier sauce, you can add 1 teaspoon of Dijon or English mustard.

The spices crushed in a mortar give an oriental aroma to the sauce - cumin seeds, coriander seeds, black or white peppercorns.

Sometimes I use dried herbs - oregano, thyme, fennel or anise seeds.

For Mediterranean flavors, season the lemon sauce with various fresh, chopped herbs - about 2 tablespoons to 250 ml of sauce (parsley, green onion stalks, rosemary, oregano, basil, hatmatuchi), crushed garlic or chopped hot peppers. For freshness, add them a few minutes before serving.


Paella with seafood

Paella is one of the dishes I like to indulge in when I go to Spain. Although it is a recipe that in the original version is cooked with chicken or rabbit, I like the one with seafood the most.

Paella is made in about 60 minutes and in addition to the ingredients, you need for cooking a wok, a normal pan or a saucepan of at least 3.5 l. The ingredients below have reached about 8 servings.

What do you cook a paella with?

How to cook a paella?
